Dry aged ribeye at Ralph Westwood

Ralph Westwood now has a dedicated cooler for aging/storing dry-aged beef.
I bought a 10lb 4-rib bone-in ribveye roast at $16.99/lb. Boneless version is $19.99/lb.
Will be roasting it for thanksgiving along with a 17 lb brined Diestel turkey from Costco at $3.69/lb (same price as Gelson’s after Gelson’s rebate)
