Daikon is a kind of radish.
Daikon is in the radish genus, though radishes and turnips are in the same family.
But @J_L clarified that he uses daikon for his ragu. That said, I had good luck just using up the rest of my Tokyo turnips.
Interestingly, turnip cakes (lo bak go) use . . . daikon radish.
Traditional Dan Dan Noodles from Sichuan China must have the following ingredients:
- Yibin Yacai (preserved mustard)
- Sesame Paste
- Stir-fried Crispy Ground Pork
- Chili Oil
I will share a recipe later from a chef who has been working in Sichuan China, Singapore and US for over 30 years,
