Hmmā¦
(new) aguachile, cilantro, mint, chile de arbol
cold, spicy, sweet, refreshing
(new) sea scallops, leche de tigre, brown butter, fennel
scallops were nicely cooked, leche de tigre tasted like a tart, spicy, orange juice. tasty.
(new) tartare, green garlic crĆØme fraĆ®che, tomato, montasio frico
not bad, veal was pretty mild and lean, could have used some more assertive flavors.
(new) , pomegranate molasses, yogurt, baharat, parsley
interesting use of bahart gave this dish a middle eastern taste. the chefās put all their heart into this dish.
(new) katsu, yuzu kosho aioli, togarashi, kombu marinated cucumber
delicious, soft and crispy eggplant balanced with the cool aioli. however, this was tiny, about the size of a tea saucer, i could have eaten about 10 of these. @Chowseeker1999 and @TheCookie give this a try.
sweetbreads, creamed spinach, hen of the woods, caper, brown butter
perfectly fried little nuggets of gland deliciousness balanced with a nice amount of acid.
foie gras fucking biscuit, maple sausage gravy
the best damn dessert on the menu
Thanks @PorkyBelly. Looks delicious! I really like the creativity and refreshing sounding dishes Animal is adding these days. And of course finishing it off with something āricherā like their Foie Gras (anything - Biscuit, Loco Moco, etc.).
Had a memorably great meal last night. It was a social occasion so I didnāt get many photos. Carta di musica, tendon chip, charred cabbage, scallops, pig head, pig ear, tongue, rabbit larb, all fantastic.
The prawns were insane. I probably wouldnāt have ordered them but i smelled them at another table. We devoured every scrap except the carbonized antennae. This was 1.5 orders.
Genius dessert, never had anything like it. Soft cheesecake custard on the bottom with crunch from both the sorbet and graham cracker crumbs.
The wine markups were also insane. Occhipinti Frappato goes for $42-48 in stores, here it was $118.
Animals consumed
(new) carta di musica, nduja, fennel pollen, lemon
Fine. Stick with the chicken liver toast.
(new) chicken oyster yakitori, smoked paprika, herb creme fraiche
The fish cheeks of the chicken. deliciously tender, crispy, and smoky. science needs to engineer a chicken with more than two oysters.
(new) sugar snap peas, ponzu, green garlic, sesame
nice bite with a tart, nutty sauce.
prawns, roasted garlic, chili lime salt
snappy prawns from new zealand. prime head sucking alert.
crispy pig head, pernil, congri, marinated onion, lime
a croquette of pig head with red beans and rice. okay, a bit dry.
(new) king crab, meyer lemon, furikake, potato, chive
like a king crab shepherdās pie, delicious. this reminded me of the blue crab simplissime at tesse
tandoori octopus, tamarind, yogurt, kumquat
So much going on here, but like most dishes at animal, eaten all together itās totally balanced and just works.
bacon chocolate crunch bar, s&p ice cream
#murica
Thatās a lot of animal.
Love this report. I know Iāve been going on about Majordomo, but my heart still belongs to Animal.
Still looks great after all these years!
For a place that serves heavy duty food, their sake list, mostly their flavor profileā¦is on the light side, lol.
Hi @PorkyBelly,
Great pics and report! Oh! Who was it that recommended the tandoori octopus back in the day? And it was gone off the menu for a long time now. I must try it (I strangely keep missing it whenever we go itās not on the menu).
Was there anything new that you think was a distinct replacement for their Foie Gras Biscut & Loco Moco? Thanks.
I thought the carta di musica was fantastic. Definitely recommend it.
yep, that was me.
unfortunately they donāt have anything that comes close to replacing their foie dishes. on a related note, what would prevent them, or any restaurant, from serving and charging for say just the biscuit and then adding the foie free of charge? i shall coin it the āfoie gras-tisā.
2.5 isnāt really insane around here i think. at x3 iām upset but 2.5 iām tolerantā¦ dessert looks and sounds crazy!
Why risk it for minimal profits? Restaurants can say whatever they want but they risk getting into a lawsuits. Their insurance will cover defense but their future premium will shoot way up.
I think thatās it. Restaurants have enough trouble as it is and would rather avoid the hassle. But itās a big loss for Animal - unlike some who have a foie dish just because - who built part of their rep on those dishes. Itās a bummer. But as long as the Pork Belly Sliders are safe Iām good. And Iāve got my eye on the shellfish dishes theyāre now slinging.
my favorites new dishes from the current menu are the eggplant katsu, chicken oysters, king crab, scallops, and prawns.
and of course i have to round it out with some of the classics: chicken liver toast, beef tendon chip, hamachi tostada, veal tongue, tandoori octopus, pork belly sliders, yellowtail collar, and tres leches (rip foie biscuit and loco moco).
Thanks!
I was hoping youād pick those. Maybe the eggplant katsu, but I was thinking peach aguachileā¦ if we donāt get the scallops. It looks like they switched out the king crab & potato for a dungeness w/tomato & kombu. Doesnāt sound as good as a āking crab shepherdās pieā.
ā¦Of course you did.
the peach is good too, but i wouldnāt sub the eggplant for it.
theyāre both pretty small so i guess the correct answer is to get them both.
Thatās always your correct answer.
@PorkyBelly are the chicken oysters legit actual oysters or bits of cut up thigh meat? Iāve been buying chicken backs in bulk and meticulously carving out the oysters myself, but this will save me a lot of work!
