I think he doth protest too much. “Fusion” has certainly been widely misused, but sometimes it’s spot on, like when Roy Choi made kalbi tacos or Ed LaDou put duck sausage on pizza.
To me, the term ‘fusion’ remains legitimate. Often leading to ‘culinary confusion.’
