Boatload of butter cookies

Someone gifted me a boatload of butter cookies. After giving away a shitload, I still have a truck load of them. What to do with them? The thought came to blend them and use them with some browned butter and vanilla for crust on a cheesecake. What else?

Butter cookies are quite bland. You’d want to add some spices to give it more pizzazz.

Make cookie sandwiches with caramel, cajeta, nut butter, ganache, or …

I eat them. They wouldn’t last a day.

But if I had to, I’d Turn them into crusts for lemon bars or key lime bars.

Edit: sorry, I missed the part where you suggested you were going to use them for cheesecake crust. And I thought I was being so clever. (wow, has my reading comprehension gone down LOL)

Trifle’s a good idea.

Maybe you could use them in place.of ladyfingers in a tiramisu or charlotte.

Cookie ice cream sandwiches. Roll the ice cream edges in chocolate chips, sprinkles (red, white & green), or chopped nuts. Give a few away as gifts, & keep a few in the freezer for you & yours. Happy Holidays :slight_smile:
