Someone gifted me a boatload of butter cookies. After giving away a shitload, I still have a truck load of them. What to do with them? The thought came to blend them and use them with some browned butter and vanilla for crust on a cheesecake. What else?
This is kind of a weird ouroboros of a suggestion but maybe make cookie butter?

Butter cookies are quite bland. You’d want to add some spices to give it more pizzazz.
Make cookie sandwiches with caramel, cajeta, nut butter, ganache, or …
I eat them. They wouldn’t last a day.
But if I had to, I’d Turn them into crusts for lemon bars or key lime bars.
Edit: sorry, I missed the part where you suggested you were going to use them for cheesecake crust. And I thought I was being so clever. (wow, has my reading comprehension gone down LOL)

Cookie croutons for ice cream sundaes, hot chocolate or eggnog
Trifle’s a good idea.
Maybe you could use them in place.of ladyfingers in a tiramisu or charlotte.
Cookie ice cream sandwiches. Roll the ice cream edges in chocolate chips, sprinkles (red, white & green), or chopped nuts. Give a few away as gifts, & keep a few in the freezer for you & yours. Happy Holidays
