Interesting. In Paris, the trend for a half dozen or so years has been the Brooklynization of food.

Pardon my ignorance, but what defines “Brooklynization”? And how has this trend been received - has there been backlash from more traditional Parisians?

Small hip experimental restaurants. Similar to California style. Very well received. Paris food scene is a very large tent with room for all tastes.
