This raises an interesting question: can you get a wok hot enough with electricity?

The trend is away from fossil fuels in favor of renewable energy, so why put gas pipes in new buildings?
This is a proposal for new construction in the city of Santa Cruz also.

Chez Panisse does much of its cooking with wood, so giving up gas wouldn’t make as much of a difference as it would many other places.
