My (decidedly less dramatic) translation of that phrase:
Once he started on this road, David Chan has been tireless in his quest. Although he occasionally tries other cuisines, Chinese food has become his main focus.

Just a coincidence as both items had been in the works for months and they hit at almost the same time. In contrast my comments in last week’s LA Times article on Valley Bl. after the pandemic was barely ten days from time of contact to print.
