I always remove the fat, especially stock.

On a side note, the only way I can eat Tsujita is a couple bites, then take home to overnight in the fridge. Try it some time. Easily a third of the broth is pure fat.

Thanks. I’ve had it so long I can’t remember. It was either a gift or was once my mom’s or aunt’s. I’m open for other suggestions - maybe grating fresh wasabi? @Sgee could probably answer that.

When we’re in Seattle there are (at least) two great, huge Asian markets that have loads of non-food items. I should check it out.

You buy fresh wasabi? I saw it in one of those markets…for $100/#! Not that one would buy a pound.
