Eater: A Brief History of Modern American Dining, Featuring Andrew Zimmern

I just came across this. Lots of interesting information, including the secret to Russ & Daughters’ whitefish salad. I guess there’s a podcast for people who like things slow.

This podcast leads off with him pontificating on Zimmern’s inadvertent catch phrase, “food woody”, how it differs from a “toe curler”.

I am ok with this.

He must talk fast. The podcast’s only an hour and I feel like it might take me that long to read the transcript.

How can so many people serve so much shitty kale all over America, and no one says, “You know something? I’m just gonna copy what Waxman does, because it’s so good.”
