I have been diy’ing my own sushi during the lockdowns early covid era thanks to these suppliers offering home delivery.
That’s awesome. I’m not quite there yet but it’s been enjoyable learning how to break down and debone quality fish at an affordable price.
I went over my skis the last round with shinko - do not recommend for diy . I think it helps to better understand the fish and flavor. Also I have a far greater appreciation for professional sushi chefs.
