I have been diy’ing my own sushi during the lockdowns early covid era thanks to these suppliers offering home delivery.

I went over my skis the last round with shinko - do not recommend for diy :joy:. I think it helps to better understand the fish and flavor. Also I have a far greater appreciation for professional sushi chefs.
