Help! Knife Sharpening in LA, Westside preferred

If we are extending past westside, Ross Cutlery in DTLA across from Grand Central Market sharpens knives and scissors for the pros. They are also open Sundays, which makes for convenient pick up and drop off. Last time we got them done, I had to warn our guests about how sharp they were. (It was around the holidays when we have a lot of house guests). They were FREAKING OUT.

I don’t know that much about knives, but I do have weak hands and pain, so my judgment is mostly based on how much force I have to use and whether my hands hurt or not. I had a guy who retired, so last year I tried a couple different farmers market guys that weren’t great. Then I found Capehart Cutlery. He has a truck and goes around to different restaurants. It’s $5/knife. If you text him he can tell you the next time he’s in your area or he also does work out of his house in Granada Hills.
