Chez Panisse truly teaches how to treat employees well and truly values a work-life balance. They were doing it before it was talked about. Alice has always led the way with putting people first.
Ruth Reichl posted a bunch of old menus in her substack. I hope this works but thought these were pretty neat. These menus don’t look that out of place for some restaurants today.

That 3/25/84 menu is nuts. I think it must have been a special occasion since I believe they’ve always been closed on Sundays.
