Bagels have become a big deal in Seattle. NYC-style. BTW, our fave place has seeds on both sides!!!

Somewhere I read of a guy disparaging the people who use untraditional methods in their bagel making (no, not @robert :rofl: . Someone else, a baker opening a bagel shop. Canā€™t recall exactly.

Canā€™t have seeds or toppings on both sides because of the oven or something like that. Indicates non traditional method/equipment.

I need to find the article. Iā€™m sure Robert will post a response with it :wink:

I chatted briefly with one of the owners and raved about that. He said 'well, thatā€™s what we like about bagels, isnā€™t it?

I like my bagels to have seeds on zero sides.

i use my hands even if it is neapolitan style. itā€™s just better that way.
