Somewhere I read of a guy disparaging the people who use untraditional methods in their bagel making (no, not @robert . Someone else, a baker opening a bagel shop. Canāt recall exactly.
Canāt have seeds or toppings on both sides because of the oven or something like that. Indicates non traditional method/equipment.
