They should have already raised prices! But I do get no one wants to drive business to your competition -even in the taco game you are better off competing on specialization and quality imo

a mcdonalds plainass hamburger, not even a cheeseburger, can cost over $2 at many places these days

Somewhat analogous to dollar slices in New York, though a lot of those places switch to lower quality ingredients to maintain price. Taqueros definitely should raise prices but get their concerns about demand. Wonder if cutting/limiting the salsa bar is the way to control costs. Or will consumers balk. Myopically I find the lack of salsas at El Ruso to really detract from the experience so…

Agreed. There has been ways that taqueros and their suppliers have been keeping costs down for years. Some of them super shady (neighbors agave plants for hit again late last night). It’s like the donut documentary highlighted. There were ways that they came to dominate… Ways that may not exist now because things change…
