That mam is potent. When I was growing up, there was a type that Dad could eat, and a type that Mom would cook with…days where she used a lot, I would have to open the windows or go outside for fresh air.
The stuff that Dad would eat was contraband that one of the relatives smuggled in carefully wrapped plastic jars in their luggage during visits to the old country. I was more concerned that stuff was going to spill in the luggage than impressed that they were able to get it through customs.

When vien dong folks retired a few years ago, it was blow to northern specialists. I think northern food gets overlooked (compared with hue/central cuisine) in little Saigon but the new guard at hanoi corner and pho co hanoi looks legit.

pho co ha noi is one of my favorites, its I would recommend the pork bun cha and the grilled catfish noodle soup (super dilly). Its further away from little saigon garden grove, but we randomly stumbled upon it after looking for granite countertops once in OC.

Oh man my parents were not impressed with these recs. Guess I’ll have to eat everything by myself.
