I have tasted tuna the day it is caught, and then once daily for 5 days after. Days 4-5 had the best flavor/texture.
Thank you all for your responses. Im familiar with the Joint and fish dry curing. I was wondering more about fresh cuts of nigiri etc. Really good to know that this antiquated line of thinking is no longer valid today!
Ps I love shopping for fresh fish/ sashimi ANY day of the week at Yama on National & Barrington.
Big fan of yama too, I’ll probably pick some up on friday! I’m stoked for the ktown one to open because it’s even closer to my spot.
but yes when people are striving for freshness, you’ll be able to get it any day of the week. I love a monday night dinner sometimes instead of my usual “go out on a saturday”

Oh wow!! Where is the K-Town going to be? I love the one in Mar Vista and My quickie sushi place has been Uobei in Downtown, but K-Town would be just as close.

Went last night with some neighbors and had a great time. I thought the price point was a steal and the dishes were very enjoyable. I kept an eye out for the lighting but it didn’t bother anyone.
I went last Thursday based on this board’s enthusiastic recommendation and had a great meal. Wasn’t mind-blowing, but top-tier all around - especially with the one-man-show by Yasu-san. Some wonderful bites: his ankimo is some of the best I’ve ever had, and same goes for his iwashi and ika-uni pieces. Some other pieces disintegrated unfortunately, such as the ebi with its own roe. But in all, for $150 - you can’t get a better deal in town.
Not sure I like ppl enough to sit at this tight of a sushi bar, lol, but I had a wonderful meal tonight. Fun to chat skiing in Japan with Kusano. He too has had epic days in Niseko.
Could have used an extra hand roll, maybe I shoulda asked, but leftover Marie callendar’s pumpkin pie hit the spot after.
