“White tuna” sold at sushi bars is often escolar.

I am utterly unsurprised by any of this, because I had a marine science course. The instructor talked of all the different names fish could legally be sold under in California and how those differed from state to state. That’s just the legal part. We also dissected fish in that class. So, I am pretty good at recognizing differences. My knowledge of fish and fish parasites also kept me from eating sushi for a long time :slightly_smiling_face: And, it came in handy when I did start eating sushi :smiley:
