Naan Recipe?

Anyone found a reliable naan recipe lately? Have tried Kenji’s (too much like pizza dough) and a few others. Anything with an overnight proof for more depth of flavor?

Here is Gozney’s which does have the long, slow rise. Garlic Naan Recipe | Roccbox Recipes | Gozney. A caveat; I haven’t tried it yet, and it is designed to be cooked at a very high temp mimicing the environment a tandoor oven produces.

Thanks! funny enough, I ended up trying this exact recipe and cooking it in an Ooni. Flavors were right, but it immediately puffed up in a pita-like fashion which wasn’t quite right. Actually cooked much better directly on the charcoal grill.
