the only acceptable alternative to tonkotsu is shio
miso is life
but I suppose salt is life too…
not sure where else to put this but Jinya brought back their Tokyo Tonkotsu ramen, for those of us that are absolutely sick of pure white tonkotsu broth. A damn fine bowl today (note: if you are not a fan of Jinya this probably won’t do anything for you).
Tokyo Tonkotsu
pork broth: pork chashu, green onion, kikurage, onion, *seasoned egg, fish powder >> served with thin noodles
I had Jinya’s Tokyo Tonkotsu years ago and it was excellent, on par with something you’d find in Japan. The fish powder gives it that extra dimension that you find in Tsujita’s tsukemen broth. They should give it a permanent space on the menu.
