You do not use tamarind any more as an ingredient in Pickapeppa Sauce?
No. We took the decision to remove tamarind, which was actually only present in very small quantities, because reliable supplies of consistent quality were not readily available. This has not affected the quality or flavour of our flagship sauce
‘Tis a shame. I first heard of Pickapeppa Sauce, back in the 1970’s from a reference in a poem (Robert Duncan’s, possibly) which refers to it tasting of tamarind. I later got a pair of prints in NOLA, depicting bottles of Pickapeppa and Tabasco. The Pickapeppa bottle clearly has the old ingredient list.
