pork loin usually only cooks for 25 mins.
Sure. Pork loin is pretty lean so when I do it i inject some of the marinade into the meat as well

How do you cook it? also, I cook it until it falls apart right?
Making a recipe for pork shoulder or whole pig with a lean cut sounds like a bad idea to me. This recipe seems dubious, I’d expect the meat to be overcooked and dry.
No, i cook it like a roast personally to 140f
Also i would use the marinade to baste every 20 min or so

For pork butt i do it totally different and do more of a braise
