I’m not really sure what to expand on. Season it in advance… heat up both pans and fry with weight on top… flip every 5 minutes for 23 minutes.

i’m not scientific very about this stuff… whatever fits the pan basically… usually i buy 5 lb birds for stocks and roasting… this lady was 4

I’m not either - scientific that is. But sometimes, i.e., the Zuni chicken they want a super small bird which I can never find so that extends the time some. Thanks.
