Sous Vide: What Are You Cooking?

145 sounds good.

We just did our oven roasted breasts to 145 and it was perfect. The previous 160-165 was over cooked.

Nice job, @ChineseChou! I love sous vide chicken…it’s so tasty and juicy! I like doing thighs with skin on so I can pan sear it.

I haven’t cooked this but it sounds super.

Franklin BBQ says to reheat a whole brisket at 165° for 75 minutes. Should I reduce the time for a quarter brisket (1.5 lbs., half the point).
