Suggestions for a vinegar tasting

For years I’ve been accumulating various odd vinegars, more than shown in the photo. I want to do a comparative tasting so I know what each might be good for, and whether I can just toss some.

I’m thinking to put out sliced cucumbers, grated carrots, lettuce, baguette, plain rice, olive oil, sesame oil. Anything I’m missing?

Sugar cube. Drop some of the vinegar onto one and taste from the cube. The sugar helps neutralize the vinegar and you taste the underlying flavor better
