Hide-san kills it. Not sure why they don’t get the notoriety, the biggest Michelin blunder IMO.
In general, Michelin doesn’t like brands which try to specialize in more than one thing - in this case, Tsujita does ramen but it also runs a sushi-ya.

I have been going to omakase with Hide san for years, and today I called and found out he is gone!
Anyone has any idea where he is gone to?
Wow! I just had a meal with him less than a month ago and he didn’t say anything.
I believe he is a private chef and catering right now in Los Angeles.
I wrote in another post (in the Sushi Delivery and Take Out Thread) that their appetizer box is amazing. Just when I wondered if I would get bored of them, they introduced slight variations. The addition of fried mentaiko was very nice, so was the spinach in sesame sauce.
The wagyu gyu-don is very re-heatable for the next day, and overall this one gives them an extra-kudo is, their packaging is relatively minimal and environmentally friendly. We did ask for no utensils though, as we always do these days.
