I really love this Salt & Pepper Shrimp Rolls recipe and have made it a few times. The only change I make is the addition of sliced serrano chiles.

I doubled the spices, used Grandma’s molasses, dark brown sugar, and 1-1/2 teaspoons salt. I had everything ready to go—pears and caramel in the pan, butter and sugar in the KitchenAid bowl, dry ingredients in a bowl, egg and vanilla in a cup, molasses in a measuring cup—so during dinner I could throw it all together quickly. Definitely will make this again.
I did not serve it with whipped cream as the main course was fondue and that seemed like dairy overload.
Seems weird to have Jimmy Nardellos this time of year, but they came in our CSA box just two weeks ago.

I’m not sure that probe is accurate. Pulled it at 125 and this was medium heading into well. Guess I’ll check it against the instant read.
I tested the probe against the instant-read and they were only a degree apart, so WTF.
Doesn’ t matter it still looks really good. I’d eat it and enjoy it and I like meat on the rare side
You know dinner is going to be good when you pull this out of the fridge. It’s short ribs slow oven roasted in tomatoes, garlic, beef stock, herbs, seasonings and a Parmesan round. It was about a half inch of fat that rendered from the short ribs.
Choucroute garnie made with a lot of fat rendered from a Rougie magret, onion, homemade nappa kraut, caraway, a couple of Cream Co. linguicas, and the duck meat with a potato gratin with cream and mushrooms. Good meal but absurdly rich, would have made more sense to have the choucroute.with boiled potatoes for one meal and the gratin with a salad for another.
Christmas Eve family lunch with an abnoxious amount of food.

Very loose seafood pancake. Seafood ratio very high.

Good lord, what a perfect looking meal.
