Fair point on COVID. I wonder if Mei Lin would be selling Chicken Sandwiches or still running Nightshade if there was not pandemic. I hope the former but for the economic reasons pointed out by others on this thread I’m not so sure, though I’m sure if she’d held out until her Food Net stardom the answer would probably be yes.

Baroo has a strong Buddhist vegetarian influence.
Especially now that they have a purely vegetarian or vegan menu! I would say that Baroo’s flavor profile is pretty different than Chinese style Buddhist restaurants @100percentdoghair was looking for, so just be aware of that if you decide to go. I hope you would love it though.
This time last year I was in Tokyo with my partner, and likely we were at a standing bar where we ordered more-than-competent snacks from a tablet while sharing a big-ass Sapporo with a local oji-san. Certainly wasn’t a place with dual English/JP menus, as their device was entirely in Japanese.
I’d love a standing bar! Next to me! Quick bites and a brew and off to home.
(And just for a bit of snark, the menu would have a tourist-only menu and one for the local yokels… Kidding!)
