White Alba Truffle Dishes -- Los Angeles restaurants or homemade

Went to Angelini Osteria on Halloween night '15 to try their version of White Truffle Risotto $95 from their A La Carte menu along with a plate of Roasted Duck Breast $34. It was still early in the season so I didn’t get the pink-tinged mushrooms, but they were extremely fragrant.

Preparation was much simpler than say Melisse’s truffle risotto, but still very enjoyable.

Very easy to do at home

Wowza! The pink tinge is visible in the Albas – is it true the pinkness signifies a higher grade/stronger aroma?

I think it may work better over risotto / congee. More residual heat to warm the truffles vs. rice.

There was a very good abalone congee recipe by David Kinch on mind of the chef recently. Substitute the original toppings with truffles

This was from a couple of seasons ago. This year’s were much whiter and while aromatic were lacking in flavor.

I’ve heard these darker ones with white streaks are the ones that grow under oak and are the most flavorful.
