I think there is a lot of regionalism in bbq and outside of Texas not a lot of areas focus on beef / brisket. In LA you are probably expected to have beef on the menu even if you really specialist in pork.

Personally I don’t order beef bbq unless it’s a Texas style place. YMMV and all that.

I haven’t had Heritage and some of the other places that popped up in the last few years but Bludso’s Compton was so freaking good. This is just anecdotal from a friend who has had Central Texas BBQ, “Pretty damn close, not as good, but pretty damn good and close.”

My friend got that book as well.

Wonder what was fake bludso’s handle?

He goes into his family background in great detail and he spent summers of his youth in Texas working in his grandma’s underground bbq restaurant. This cookbook really is an ode to his family.
