I loved that dish so much that we had 3 the night we went there…it so reminded me of a Vietnamese dish.

Yes but who will document places like Little Saigon when @JeetKuneBao is back east? Granted we count on @Chowseeker1999, @PorkyBelly, @J_L and many others, including you, but his exploration of Little Saigon is epic.

Yes! To me Animal creatively represents the mix that is L.A.’s food scene best. It’s greatly influenced by Asian and Mexican without being fusion-y. I sound like a bad food writer but it’s true.
