yup just serve as is with a sharp steak knife.
I must try this.
we usually marinate boneless beef short ribs (the ones you buy at Costco) and throw them on the grill like a steak. This one we Sous Vide then threw on the grill for a quick sear. (sous vide at 129 degrees.
