180 grammi pizzeria romana

Best pizza in this category ever.

I usually never expect to have a good Margherita buffala in tonda romana but they leave buffalo cheese drain for hours and not cook and put raw string only. Result is non soggy straight up incredibly crispy but flavor is amazing. Usually pizzas in Italy are weaker in flavors but this pizzeria is different. Best one so far in Italy for me. Best Margherita ever.

Fried food here is incredible. Baccala/hashbrown, cacio pepe with cornflakes, suppli, beef tongue with salsa verde and fig jam, chicken parm arancini was all amazingly crispy and had such a good flavor.

Banana sundae, fried dough with different tomatoes and kimchi spring roll was good but can pass if you want to focus more pizza items








Dessert pizza is coolest pizza I ever had called fluffy, dough is between pizza and brioche. Not like cloud like because no fat in it like traditional brioche but it’s vegan brioche made with sweet potato and other secret ones. Caramel is vegetable pieces leftovers (peeled, pieces leftover from prep) into caramel so it’s compost 0 waste pizza. Vegan chocolate mousse also.

I’m going confine in Milan which is really top level too. They are only doing tasting menus hope I can learn some good tips
