Bitter Melon is

fucking BITTER! OMG. what to cook with it to make it less bitter? The whole family spit it out. LOL

If you want something less bitter, don’t start with bitter melon.

No going to lie, my favorite preparation is one I grew up eating. Thin slices sautéed with onion and then thrown into a scrambled egg mixture that has fish sauce, soy, sugar, salt and pepper. Adding in dried shrimp is a plus. Fresh shrimp is okay, too.

Simple simmered/sauteed bitter melon with thin strips of lean pork. I almost always serve bitter melon with a grain (usually rice) or porridge.

Some people use generous corn starch/water mix while cooking to absorb some of the bitterness.

Brining the melon before cooking can also help neutralize some of the momordicine of the bitter melon.

This recipe has a step that claims to reduce bitterness.

Slice paper thin. Chill in ice water, drain. Dip in your favorite honey and place in mouth
