Crustless Quiche

I saw a NYT article about crustless quiche and thought I’d share the recipe I’ve been making for years. You can assemble ahead of time, freeze, thaw and bake when you’re ready. It was a super Christmas Eve brunch item a few years ago. Use whatever combo of ingredients you want. Vegetarian works just as well.
