I think Charcuterie fits in cured meats. But after a month of Korean I’m changing my vote to the freshness of FRUITS.

Lol… that’s funny. I asked that question during Vedg Month. It’s technically a fruit, but used as a vedg in the culinary sense. I think.

Octopus can actually be better (more tender) when bought frozen - freeze-thaw cycles help tenderize the meat. One of the best ways to cook tender octopus is sous vide (everybody has slightly different times and temperatures but I would start at 180F for 6hours)
