I had a memorable Bollito Misto at a 99 year old restaurant in Florence near the end of October 2021. It came with a wonderful anchovy salsa (more like a spread) and another one with parsley. Also had fried artichokes and zucchini. Others had pork chops, and mixed tripe (honeycomb and book tripe) which was absolutely delicious.
