The chef knows who he got the beef from. He doesn’t necessarily know which ranch the supplier got it from, since for top dry-aged beef wholesalers that’s a trade secret.

Yes. I’m the biggest proponent of mandatory Thaitown and KTown visits for tourists. But for Mexican food to be more memorable than just what’s on the plate there are few places. Guelaguetza and yes, Taxco. It’s not just kitsch as you elude, the food IS actually really good. If you find them inauthentic I urge you to visit Mexico-city, to which they stay true. That chicken was focken BORRRRRN in the sossss
