I don’t know if I’d want it by itself but paired with other things it can work well. I still remember a foie gras ice cream sandwich at F.O… years ago paired with a hazelnut oatmeal cookie. Not bad for under 5$ IIRC.
The foie gras profiteroles at Le Pigeon in Portland are amazing. They are a must get every time I visit Portland. They pipe it fresh when you order.
Cauldron Ice Cream occasionally has it on their limited menu option and pairs it with a strawberry sauce. I haven’t seen it in a while, though.
