We’ve been getting them in our CSA box for the last three weeks. Outside of just eating them, putting them in salads, or wrapping them in prosciutto and baking I don’t know what to do with them.
Might be better with hachiyas, but how about jam?

Yes, but not exclusively. I actually prefer fuyu hoshigaki because they are more gummy (like gummy bears) than hachiyas. Hachiya hoshigaki can end up quite mealy.
