Half a turkey...what to make with it?

I think you just invented turkey fritters.

Some people always include eggs, others cheese, you can use chicken or beef or incorporate vegetables. For me, it is a perfect vehicle for using dinner leftovers. The main and indispensable ingredient is tortillas, though you can always use leftover tortilla chips.

Start by shredding the turkey. Cut the tortillas into chip sizes. Saute them in oil over medium high heat - you want them to crisp up. Add salsa if you like heat - I usually blend up some chipotles in adobo sauce for a fast and easy sauce - though this is on the spicy side. You can add sour cream to temper the heat, or use another salsa of your choice. Add the meat. Add any cheese you want, or leftover veggies like green beans or squash. Add eggs that have been whisked (3-5 depending on how much you want). Don’t overcook eggs. Add cilantro if you have.
Plate and top with crema mexicana or homemade guacamole or nothing! It’s all good!

Serve for breakfast with plenty of hot coffee!
