Star ratings demand consistency as well as quality, so if one of the inspectors hit a place on an off night …

No Japanese restaurant in California has more than two stars. Except for Masa in NYC, the Japanese restaurants with three are all in Japan.

Sushi Shikon in Hong Kong had been getting 3 stars since 2014.

Wouldn’t put it past Michelin considering how bad the award ceremony went last night…

Also interesting that Sushi Saito in Hong Kong dropped from 2 stars to 1 this year. Saito’s disciple, Shion Uino, who had been with him for 8 years ventured out on his own in NYC at Shion 69 also only garnered 1 star.

IMHO Michelin applies the a similar lens to sushi as it does haute French, which can yield inconsistent and often surprising results in its sushi ratings.

I just had two successive Michelin one-star omakases in Tokyo, in two successive evenings, but with wildly different experiences on my part. I don’t plan on dining as much at Michelin-starred sushi-ya’s in Japan anymore, based on my experience this past trip.

Sushi Shikon is only in the Sushi cuisine category, not in Japanese, that’s why I missed it.

Still, Masa in NYC is the only three-star Japanese restaurant in the US. There are three two-stars in the US, and they’re all in LA.

There are 17 one-star Japanese restaurants in California.
