The ones used in Hong Kong are mostly from China (to each shop’s specification in terms of age). The good shops get them delivered “fresh” after they get processed in the mainland. As far as I know, the only goose available here are frozen.

Chinese geese are usually knob geese that have the knob on their heads.
Canadian geese is different.
Fresh goose is available here, barely, by special order from hipster butchers at certain times of year.
