Thomas Keller has issued a public apology.

Classy response.

I would have loved being a fly on the wall as Chef Keller made the necessary “adjustments” to his staff…

Stop spreading rumors.

There are no flies in the Per Se kitchen.

It’s not personal its business.

Very savvy of him and effective damage control.

Brand maintenance. Pure and simple.

Sounds like it has gone even further downhill.

Boy, those interim reviewers are sure trying to burn through as much money as they can, while the burning is good.

The New York Times has the largest circulation of any newspaper in the US. Their annual revenue is >2 billion and profit (whether operating, net, or EBITDA) is in the hundreds of millions. Sending a reviewer to Per Se for the first time in 8 years seems pretty reasonable.

Counter point: there are thousands of restaurants in NYC and more opening every day. Let’s hear about them, rather than ones that are already well known and have been reviewed more than once.
