The restaurants it most reminded me of are Dunsmoor, Meteora, and Destroyer. Wood fired everything. Interesting dishes with earthy flavors like mushrooms, pine, and smoke. Lots of seafood. I could see wide-ranging views on this restaurant. It’s an edgy star selection for Michelin.
Example dishes in the picture below:
Mushroom consommé with mushrooms, pine flavor, and chunks of chewy smoked sea bass. I think this dish would be polarizing, and I’m not even sure what I thought about it. [Several days later, I came to a conclusion: I disliked it.]
Sourdough bread (very Meteora-ish to me).
Puree of squash with brown buttery breadcrumbs and pomegranate seeds
