Bought these by mistake. I guess they’re fresh since they were in the refrigerator with other fresh noodles. How do I cook them? Do I cook them?

Normally you would cook them briefly in boiling water, drain them, wash with cold water and then use them for example in wok at high heat in a stir fry

Yep! These are the only kinds I buy. Just dunk them in hot water and be sure if you do use them in Pho (which I highly recommend, I make a simple Pho with just thin cut fatty beef) the broth is super hot.
