As opposed to fried, or in soup.
Isaan station has a salt encrusted grilled fish, but when I got it I wasn’t impressed. They used tilapia and the fish tasted muddy and the texture was mushy.
It’s too bad because their other grilled meats are outstanding.
I might be willing to try it again if they used a different fish, but as it is now I don’t think it’s worth the price
