We had lots of leftovers.
The leftover lechon asado lost it’s crispy skin but the ropa vieja got more concentrated in flavor a day or so after.

They’ve included a paellera for their cuban menu.

Vespertine Japan

this was the worst meal i’ve had in recent memory. you can literally go to any random japanese restaurant in little tokyo and get a better meal. as far as i know, kahn never actually cooked or trained in japanese cusine. from the notes included with this dinner, he visited japan in 2017 and wanted to recreate the dishes he had on his trip. everything tasted like somebody cooking japanese food for the first time out of a cookbook. i should have known better when i saw there was no unagi in the hitsumabushi. avoid, and if you already booked, cancel.

oshibori
The only thing they didn’t fuck up.

fresh tofu “kinugoshi”
fresh, silken tofu made to order
simmered kabocha squash, lightly marinated lotus root with sakura, kurume eggplant with cucumber, yuba with sesame
inspired by tousuiro. served with a variety of shojin ryori accompaniments
kyoto

the squash and eggplant are the only positives from this dish.

handmade soba “hourai”
cold buckwheat noodles cooked and chilled to order
served with traditional accompaniments inspired by honke owariya (est. 1465)
kyoto

soba was a clumpy, gummy, starchy mess; dashi was bland.

black cod “hitsumabushi”
black cod grilled over japanese charcoal, charred and lacquered with kabayaki glaze
prepared in the style of atsuta houraiken hoten (est. 1873)
toki, gifu prefecture

cod was cooked well but the kabayaki glaze was flavorless.

kurobuta pork tonkatsu
breaded japanese pork cutlet with accompaniments
prepared in the style oi butagumi
tokyo

i literally could not bite through the fat and connective tissue in this tonkatsu, and why is there blood in my pork? tomato was good.

sashimi
big-eye tuna maguro, sea bream, kanpachi, ora king salmon, hokkaido scallop
inspired by the preparations of takayoshi yamaguchi
kanazawa, ishikawa prefecture

sashimi was cut way too big

taiyaki
a warm, crispy waffle, shaped like a fish, filled with sweet, vanilla custard
inspired by the epic “magikarp fluffy custard taiyaki.”
yokohama station, tokyo

my fish was empty, where’s my sweet vanilla custard?

fruit sando
japanese milk bread filled with whipped cream and fresh fruits
inspired by the beautiful fruit sandos of coffee nikki
kagurazaka station, tokyo

bread tasted stale

matcha cream puff
crispy choux pastry filled with matcha cream
inspired by the “yatsuhashi” cream puffs of kiyomizu kyoami
arashiyama, kyoto
