Boudin balls. Cajun shrimp. Hush puppies. Pimento cheese.
Oysters
Crab claws
Cornbread
Shrimp (originally said etoufee but maybe a bit too close to the mains)
Fried green tomatoes
Or could just go more classic French. Maybe something in an endive or a savory tart.
Also I dunno if you’re cooking the Jambalya yourself but: The Ultimate Jambalaya Calculator (latest version) Version 7.3 | Food and Drink
Unsure if that link works but this should be more direct https://www.mediafire.com/file/tn3vgpnq67acfeg/Jambalaya-Calculator-v7..3.xlsx/file
Love Cajun and Creole. If you want to go all out, Classic Oysters Rockefeller Recipe from Hog Island Oyster Company.
Another shellfish option, https://louisianacookin.com/classic-shrimp-remoulade/
There are soups as well, or you could make po-boys and cut them into pieces. If your gumbo (I love gumbo - are you using okra or file powder?) and jambalaya are seafood based you might consider a https://louisianacookin.com/roast-beef-debris-po-boys/ although that is a lot of work, and a little messy if you are passing appetizers.
At any rate good luck and please share pics of the feast!
P.S. If by any chance your party is on a Friday night Whole Foods has $1 oysters on Fridays if you decide to do an oyster dish.
Soup as an appetizer before gumbo?!?!?
That is awesome! Thank you!
crab beignets with remoulade sauce
barbecued oysters with chipotle butter
deviled eggs with smoked trout roe
benton’s country ham with rolls (maybe with good honey)
brillat-savarin with truffle or grilled mission figs
Don’t forget the good butter with the ham and honey. Replicate the MJD bings.
I love all of that! Thank you. I wonder if the brillat would go good with the ham as well?
I usually use prosciutto with it, something silky, doesn’t have to be too aged. Actually I think even better than ham is smoked salmon with brillat savarin on a small cracker with some dill. Alternatively, honey and/or red berries are also a good match. Or just by itself and some good champagne to start.
