What are some unusual or different things I can do with filet mignon?

I have a lot of it. is it crazy to slice it thin and make pepper steak sandwiches?

Yeah. I would not slice it thin. But you can cube it and make Steak Lollys

In her book “A Twist of the Wrist” Nancy Silverton has some good recipes using filet.
In “Mastering the Art of French Cooking” Julia Child has a number of recipes for “tournedoes” which are just bigger mignons. Several of them are online.

I couldn’t find my favorite recipe of hers where you rest the filet/tournedo in an artichoke bottom and top it with Bernaise sauce.

You don’t need an underground source to get foie gras. If it’s not legal in your state you can mail-order.

Amazon isn’t delivering foie gras to California but there are shops in California who sell foie gras

D’Artagnan will ship foie gras to California, as will some Rougie distributors.
